my version of chicken lettuce wraps and baked chicken breast mushroom sauce.
chicken lettuce wraps: cut breasts into small cubes, i use the ratio of 2:1 for oyster sauce and soy sauce. depending how much chicken you have mix 2 tablespoons of oyster sauce, 1 tablespoon of sauce sauce - keep on doing this until you reach the tast you like. cut carrots, water chestnuts, bamboo shoot, mushrooms and green onion. add these when chicken is pretty much cook.you can make the sauce with oystetr sauce, soy, sugar and wonder if you want it thick. add sirachi for some heat

baked chicken breast: cut open the chicken breast (you need thick ones). put cheese, mushrooms, zuchinni, spinach or wahtever veggies you want. close it and put a toothpick so it doesnt open. cover with cream of mushroom sauce. bake at 350 or 375 for about 30-45 min. server over pasta with extra cream of mushroom sauce... yummy!

another great way to make the chicken - I take a while chicken and boil it til done, the pull all the meat off the bone and into a crockpot. Pour your favorite bottle of BBQ sauce on top with about a half cup of water. Stir and keep on low for a few hours. YUM!

Almond chicken. Take Uncle Bens long grain wild rice & follow directons for microwave but throw in your favorite green beans. I like the green, yellow, and carrot mix from green giant. Take chicken (or turkey) boneless breasts and sautet in butter & white wine. Sprinkle lawrys season salt and some basil on both sides. Let both sides brown and turn heat down to low. Just when the chicken is done put sliced almonds on the chicken and in the butter-wine sauce. THIS IS SO GOOD and I don't even like chicken! It takes about 15 minutes for the rice and chicken and you have a great dinner. Email me at if you have any questions. I know you will love it. Oh, serve with a nice fresh bread, french bread etc.
