Unresolved Question
I am looking for an asparagus recipe. Suggestions anyone?

Mmmm...Pesto chicken and asparagus quesadillas

Saute some chicken with pesto. Stir fry some asparagus in olive oil and garlic. Assemble the quesadillas with cheese, chicken and asparagus and pan fry with a little butter. Cut into quarters and serve with a crisp salad. Yum!

Honestly, my favorite thing to do is steam the asparagus, then mix some melted margarine with a little lemon juice and some lemon pepper and pour it over the asparagus. Easy, quick, and tasty.

My favorite way to cook asparagus is to rinse it, break off the tough ends, place it on a baking sheet, drizzle about a tablespoon or so of good olive oil on it, toss to coat, spread out in a single layer on the baking sheet, sprinkle with kosher salt and pepper to taste, bake @ 400 degrees until as tender as you like, remove from oven and dress w/a squirt of fresh lemon juice. It's awesome!

I grill my asparagus and then brush tips with butter or olive oil and then roll in grated parmesan cheese. I lay them flat on a cookie sheet and broil until cheese melts (careful they don't burn). Enjoy!

i like them very simple... sautee them with garlic and soy sauce. or grill them and brush butter

I had some for dinner tonight and simply roasted them on the barbecue and tossed them in butter and herbs.

That is so funny--we are making it right now for dinner! I buy the 1lb package of fresh asparagus for the 3 of us, cut the stalks into thirds. Marinade them in a ziploc for about 30 minutes:
1/2 cup red wine, your choice
1/4 cup red wine vinegar
1/4 cup olive oil
dash of salt & pepper

To cook--saute 2 tablespoons butter, then add the asparagus. Saute on medium low for about 15 minutes, or to taste. We like them more crunchy than soggy. ENJOY! Hope you like it!
